Irish Stew

Ingredients
  

  • 1 lb cubed roast or stew meat
  • 2 Tbsp flour
  • 2 Tbsp oil
  • 1 quart vegetable juice cocktail
  • 1 quart beef broth
  • 1 Tbsp Thyme, oregano, rosemary combined, chopped herbs
  • 1/4 c chopped green onion
  • 1 clove garlic
  • 1 Tbsp butter
  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1/2 head chopped cabbage
  • 1/4 cup chopped parsley
  • 2 Tbsp butter

Instructions
 

  • Put half the beef and 1 tablespoon flour in a bag, shake to coat, then do the same with the other half. Heat oil in pot or dutch oven, and brown the beef. Once beef is browned, add vegetable juice cocktail, broth, and herbs. Simmer on medium low heat.
  • In a separate pan, saute onion and garlic until translucent, then add to beef and broth mixture.
  • Saute the rest of the vegetables for about 20 minutes. Add vegetables to beef and broth mixture and simmer an additional 45 minutes. Enjoy!
