Cheesy Potato, Broccoli Soup

This potato, broccoli, soup is one of our family’s favorite comfort foods. It’s creamy and delicious.

Cheesy Potato, Broccoli Soup

Ingredients
  

  • 1/2 chopped small onion
  • 1/4 cup butter
  • 5 cups chopped potatoes
  • 4 cups chicken broth
  • 1-1/2 to 2 cups chopped broccoli
  • 2 cups milk
  • 8 oz cream cheese
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups grated cheddar cheese

Instructions
 

  • Sautee onion in 1/4 cup butter until translucent.
  • Cook chopped potato in chicken broth until barely tender. Add the chopped broccoli and simmer an additional 15 minutes.
  • put sautéed onion and butter into blender. Add a cup of potato, broccoli mixture and blend slightly. Pour into crockpot or stockpot. Put another cup of potato, broccoli mixture with half of the softened cream cheese, blend, pour into crockpot. Repeat with the other half of cream cheese, then continue blending the hot potato, broccoli mixture until it's all blended. You want to be careful blending hot liquid. Take off the little stopper on top to let out the steam and only blend a little at a time, or the steam will blow the top of the blender off.
  • Melt remaining 1/4 cup butter and mix with 1/4 cup flour to form roux. Add to soup mixture along with the milk and cheese.
  • Simmer on low in your crockpot or stock pot until cheese has melted.
  • Enjoy hot with fresh bread, if desired.
