Crepes

Crepes are very versatile and can be either sweet or savory depending on what you put in them.  You can simply add chicken and cheese or sauteed vegetables for a savory crepe, or fruit, cream, or Nutella for a sweet crepe.

Here is my favorite crepe recipe.

Crepes

Servings 24 crepes

Ingredients
  

  • 6 eggs
  • 1 cup milk
  • 1 cup water
  • 6 Tbsp butter
  • 1 1/2 cups flour
  • 1 tsp salt

Instructions
 

  • Add all ingredients to a blender, and blend for one minute. Scrape down sides with rubber scraper then blend an additional 30 seconds. Refrigerate at least an hour. To cook, heat a small frying pan or crepe pan on medium heat. Lightly brush bottom with butter. Scoop out 1/4 cup batter and pour into pan, tipping pan to coat bottom of pan. When lightly browned, flip over with spatula. Lightly cook on other side then remove to plate.
